Malmsbury(on pure basalt rocks at 500m a.s.l) and Glenlyon (just above the basalt organ of Loddon falls)sauvignon blanc grown with respect for the environment. Hand picked in march , pressed whole bunch in part and destemmed with one week skin contact for the other part, then fermented naturally in French oak barrel with no addition . The wine was matured on lees for 12 months, then blended with a skin contact portion (10%) for another 3 months maturation in tank . Small amount of sulfur added at bottling in July 2021 .
